Yogurt Curried Cauliflower

This one is also great with spicy Indian dishes, but has enough protein to be a vegetarian main dish as well. The yogurt keeps it cool and mild and is probably why my little boy likes it.

Easy

1 head cauliflower
1 cup plain yogurt
1/2 cup golden raisins
1/2 cup chopped cashews
salt and pepper to taste
mild yellow curry powder to taste (I usually use about 2 Ts)

Chop the cauliflower and steam it until tender with a little bit of water in a frying pan or skillet.

Drain any remaining water.

Add other ingredients to pan and stir until warm.

*It's best to add the curry after the yogurt, and I really add more or less raisins, cashews, and yogurt just depending on the size of the cauliflower head and my personal taste that day.

Turn off heat as soon as possible once yogurt is added so dish will remain as creamy as possible.
