A simple main dish salad for hot summer days, this is a great way to use left-over rice.

A real crowd-pleaser! Wherever I take this salad, I get requests for the recipe. The combination of apples, grapes, pasta, and garlic lime chicken is delightful. This salad is especially refreshing in the summertime.
