This is so easy, it will be your new Go To recipe for using those end of season large eggplants. This also was a great appetizer to hold us off till we finished weeknight dinner prep.

This is a great main dish that isn't hard to make and doesn't take too much time. Well worth trying. It makes a little extra sauce if it's just for two of you, but you can use the sauce on noodles for another meal.
